Just to add to my comment is my opinion. The people that say he is a bully, or has a chip on his shoulder, I really don't think he is or does. Unless you worked in a real kitchen you have no way of judging cause you dont see what goes on behind those closed doors. My first job was at 14 in a kitchen. (I'm 28). The chef kicked my ass, just like when he was starting his chef did the same. To this day I owe him everything. It's not being mean, its like going to food college..
